Celebrate the closing ceremony with this Team GB cake recipe

The London 2012 Olympics has given us all a real buzz this year and the closing ceremony this Sunday will celebrate the achievements of all the athletes. To mark Team GB’s amazing performance, why not enjoy the closing ceremony with, aherm…a slice of Team GB themed cake! Follow the recipe for this red, white and blue-layered sponge cake, decorated proudly with the Union Jack flag here…

Team GB cake recipe

Ingredients

For the cake:

This amount is per sponge layer (3 layers required) perfect for a square or round cake tin approx 8-12″)

125g caster sugar

125g room temp margarine

125g self-raising flour

2 eggs

Half teaspoon of vanilla extract

Red and Blue Food colour paste

For the buttercream icing:

150g butter

300g sifted icing sugar

To decorate:

Red, white and blue Royal icing (ready to roll)

You will need:

Cake tin

Mixing aid

3 bowls

Cake board

Spatula

Sharpe knife

Rolling pin

Method

Mix together first batch of cake mix until creamy and smooth (mix on high for best results).

Repeat process for the other two batches but add red colour to one and blue to the other. Mix in well and keep adding until you have reached your desired shade of red and blue.

You may not have three identical cake tins so either re use one or use a similar shaped tin and cut to size once cooked.

Lightly grease your cake tins with butter before you add mix to them, then bake in a pre heated oven at 180-200 degrees for 15-20 minutes depending on your oven.

Chara’s TOP TIP Turn the tin half way through baking – this will help even out any hot spots your oven may have.

To decorate:

While the cakes are baking, get your buttercream icing ready. Mix the butter and sifted icing sugar together until it is almost white in colour (this indicates the butter is mixed in well). Leave in a cool place or in the fridge until the cakes are cooked.

Once all three tiers are cooked and have completely cooled, slice off the tops and edges to create a flat surface. Keep all the extra sponge as you can use it for something else!

Now, place the blue bottom layer of sponge onto the cake board. Using a spatula, spoon on a thick layer of the buttercream icing.

Next, carefully place on the second tier; the non-food coloured layer, on top of the blue tier and spoon another layer of buttercream icing on top.

Add your top red layer on top of this, giving you a red, white and blue 3-tiered cake. If your layers are uneven, use your sharpe knife to trim the cakes to the same size.

Now completely cover the whole cake with the remaining buttercream icing and smooth over with a spatula, place in the fridge for half an hour or until the buttercream has hardened.

This is known as crumb coating a cake, it can look unfinished, as it is just to create a smooth surface in preparation for your royal icing.

Finally roll out your blue royal icing (enough to cover the cake) and smooth down over the whole cake.

Roll out the red and white icing cutting into strips to create the great British Union Jack flag, I’ve added a mini flag at the front of my cake but you can keep it simple or go crazy adding whatever you like!

Now you can wow your guests with a cake that taste delicious and looks amazing from the inside out!
