Celebrate the May Bank Holiday with these Mojito Cupcakes

Bank Holiday weekends present the perfect excuse to catch up on some DIY and home decorating, yes, but they're also a great time to indulge in a little baking. What better way to celebrate the arrival of the sun with these delicious Mojito Cupcakes. Follow the recipe here...

Mojito Cupcakes recipe

Ingredients (makes 14 cakes)

200g caster sugar

175g unsalted butter

4 eggs

150g self-raising flour

100g plain flour

1tsp baking powder

Zest and juice of two limes

Zest and juice of one lemon

40ml White Rum (optional!)

10 sprigs of mint - crushed in a pestle and mortar

For the icing

200g margarine/soft butter

400g icing sugar

Green food colouring (optional)

Lime zest and juice

Lemon zest

Method 

Preheat your oven to 180 degreeC. Line a cupcake tray with cupcake cases.

Mix together the butter and sugar in an electric mixer until light and fluffy. Add the eggs and mix together until well combined. Then add the two flours and baking powder to the mixture and then fold gently.

Add the zest and juice of the limes and lemons, and then the rum. Make sure the mint is crushed enough, then add to the mixture. Spoon the mixture into the cupcake cases and bake for 20 mins until golden brown.

For the icing:

Whisk together the butter and icing sugar (prepare for sugar storm!) Add a few drops of food colouring.

Add the zest and juice of the limes. If your icing is quite sloppy, add more icing sugar and mix well.

Spoon this mixture into a piping bag. Carefully circle onto the cake the icing, starting from the outside edge moving in. Decorate with a sprig of mint and a slice of lime and a sprinkling of lime zest!

Rose's top tips: 

1. If you put too much lime juice in the icing, just add more icing sugar until it hardens.

2. Celebrate the success of your cupcakes with an actual mojito!
