Using the best parts of the grape 'Trebbiano di Spagna', the method of crushing is soft and slow to obtain a liquid that is transparent. It is then filtered and matured for five years in wooden barrels made of 'ash tree' giving the vinegar its distinctive perfume and colour. Use to enhance flavours of fish and fresh fruit.
