Strong, fiery and pungent, la Picholine is a wonderful flavour enhancer. It is highly distinctive, brings out the flavours of early-season vegetables, and works well with smoked fish, Carpaccio, and steak tartar with a dash of lemon juice. Also excellent in sorbets and ice creams.
